Our Story

At Nitty Gritty, food is more than just a meal—it’s an expression of love. Our earliest memories are filled with the sights, smells, and flavours of our mothers in the kitchen, where every dish was prepared with such care that it transcended nourishment, becoming a true act of love. This deep reverence for food drives everything we do, blending cultures and flavours to create something truly special.

Our journey began with Matthew’s experiences working with The World’s 50 Best Restaurants, where his travels immersed him in diverse culinary traditions. His 5+ years living and working in Singapore deepened his understanding of the local food scene, sparking a desire to create something extraordinary.

In 2022 and 2023, trips to the United States revealed a gap in Singapore’s dining landscape—a need for a fusion of Singapore’s bold, vibrant flavours with the comforting, hearty tastes of American cuisine, paired with a hospitality experience rooted in grace and warmth. From this realisation, a God-given vision was born: to establish a restaurant that not only introduces this unique fusion but also radiates love and hospitality at its core.

At the heart of Nitty Gritty are Matthew and Wanyu Lee Bradley, joined by Ben Zaki, the Head of Operations. Together, they form a trio driven by an unwavering dedication to creating a space that blends flavours, cultures, and heartfelt hospitality—where love and grace lead the way.

Matthew’s background includes leadership roles in building brands such as Shariot, a pioneering car-sharing company, and Green Kitchen, a rapidly growing meal plan service. At Nitty Gritty, Matthew is the creative force behind the culinary concepts that define the restaurant. His heartfelt approach to homestyle cooking blends the distinct flavours of Singapore and America into innovative, soul-stirring dishes.

Wanyu, Nitty Gritty’s General Manager, brings over 15 years of experience in branding and design, working with a variety of respected brands in Singapore. Her thoughtful approach ensures that every detail of the Nitty Gritty experience reflects the heart of the brand. From the warm, inviting atmosphere to the way each dish is presented, Wanyu’s creative touch makes every dining moment special and memorable.

Ben Zaki, Head of Operations and front of house, has over a decade of experience in customer service. He is dedicated to creating outstanding guest experiences and fostering meaningful connections. A passionate traveller, Ben draws inspiration from diverse cultures and hidden gems, embracing the beauty of the world through his love for storytelling and video creation. His expertise ensures seamless operations and warm, impeccable service, delivering on Nitty Gritty’s commitment to hospitality and excellence.
